Runza is a Russian/German baked Sandwich. So Yummy! Its a local fast food place here in Nebraska. They have only allowed franchises in a very few other surrounding states.

Makes approx 12-18
1 package 36ct frozen dinner rolls thawed (if making pan Runzas you can use two loaves of frozen bread instead of the dinner rolls)
2 pounds hamburger (you can get lean but the fat gives it the flavor) I use 80%
1 very large head of cabbage or two smaller to make enough (shredded)
1 large onion chopped
½ to a full head of garlic chopped (or to your liking) I like a lot
1 and 1/2 lbs shredded cheese. I use cheddar but it can be any you like
Salt, coarse ground pepper and season salt (to taste) I like lots of each
Olive oil
Brown hamburger onion and garlic with pepper and season salt in a large Dutch oven. When meat is halfway cooked stir in cabbage add more pepper and now the regular salt and cover pot. The hamburger grease helps the cabbage cook and adds that flavor. Keep stirring until the cabbage is completely cooked check to see if there is enough salt and pepper. The cabbage needs plenty added but don’t overdo it because you will be adding cheese to. When the cabbage is completely cooked drain the mixture as well as you can.
For individual Runzas grease a couple of cookie sheets depending on the size of your cookie sheets with olive oil preheat oven to 350
Pinch together two dinner rolls and roll them into a thin small rectangle with a rolling pin. Put a pinch of cheese in the center and then spoon about two tablespoons of the meat cabbage mixture on top of the cheese. Roll over the top and bottom edge of the Runza then fold over the two longer sides and pinch shut and put it seam side down on the cookie sheet. Place them about two inches apart and rub olive oil on the top and sides then let them raise in a warm spot for probably at least an hour depending on how warm the kitchen is. Bake them for about 20 minutes or until browned. Put some olive oil on a paper towel and rub over the top and sides when you take them out of the oven.
Pan Runzas (easier but not as much fun)
Grease a cookie sheet with Olive oil roll out one of the loaves of thawed bread dough about the size of the cookie sheet maybe a little larger and place on sheet. Spread drained meat mixture on top of that and sprinkle the cheese over all. Roll out the other loaf of bread dough cover and pinch the sides all together. Rub olive oil over the top and any sides showing and let it rise at least one hour in a warm spot. Bake at 350 until browned and do the paper towel with olive oil over the top when you take it out of the oven.
